Grilled Double-Cheese and Bacon Sandwich

Well, I received an email the other day from Betty Crocker with various recipes on it and this beauty jumped right out at me - Grilled Double-Cheese and Bacon Sandwich. What is not to love about this sandwich? Bacon. Cheese. Grilled. The best of everything.

Grilled cheese sandwiches are fairly easy to begin with so cooking this beauty up should be quick and easy. I pre-cook the bacon so that it is nice and crispy and then layer the Cheddar cheese, bacon, and Mozzarella cheese between the bread. I usually use a griddle to cook this but you can also use an electric, gas, or charcoal grill.

Ingredients

  • 8 Slices of bacon
  • 4 (3/4-oz.) slices of Cheddar cheese
  • 4 (3/4-oz.) slices of Mozzarella cheese
  • 8 (1/2-inch-thick) slices of regular or sourdough bread
The recipe does make four sandwiches and you can double up on the bacon if you want to add a bit more of that delicious bacon flavor to the sandwich.
